Holsters are designed such that it is hard to pull the gun out unless you're pulling in the right direction (up-forward, parallel to the body). So the risk of gun grabbing from behind is minimal (with the right holster - there are bad ones that can be just broken off, I've seen these). Next time pay attention - many policemen wear open holsters too.

As for why gun store owners are trigger-happy - it is a lot worse to let the crooks get away with the bunch of guns than with a fistful of jewelry. An the shooting is always justified (it is a lot more than protection of property). And the gun store owners and clerks are usually pretty good shots, better generally than jewelers and farmacists.

Why the crooks haven't shot first - well, they are suckers!
